Apple Pie Cake – Recipe @ Thinking Outside the Pot
All three of my features this week are perfect for entertaining! Our Table for Seven’s Strawberry Cream Cheese Galette would end a dinner party in the sweetest way. 4 Sons ‘R’ Us’ Chicken Teriyaki Pineapple Rice Bowls had me thinking Luau party, And Thinking Outside the Pot’s Apple Pie Cake is perfect for a potluck or baseball picnic – my son’s baseball team loved it! 
 

Not to mention, I’ll look for any excuse to use this thing – an apple corer. Usually, it doesn’t see the light of day until September, so I’m always excited to use it earlier in the year! 

The apple corer made quick work of peeling and chopping the apples for this pie-cake! 
I love a doctored cake mix, and this one did not disappoint! This cake is made in three steps and using the cake mix simplified the process. 

The baking times were dead on. 

I made this dessert for my son’s end of season baseball picnic, and we were eternally running late, so I let it sit to cool for about five minutes, then took it in the baking pan still warm. The team was able to enjoy the pie-cake with whipped cream. I received compliments from everyone! 

We were lucky to enjoy the rest with vanilla ice-cream when we got home. Apple Pie-Cake a la mode, anyone? Even Kyla, my super-picky, non-fruit dessert eating girl loved it!
