My favorites for this week ran the gamut. I am seriously craving the Salsa Chicken Nachos from Florassippi Girl and can’t wait to try them. I’m also a bit more excited than I should be about the surprise in Grounded and Surrounded‘s Chunky Monkey Surprise Oatmeal Muffins – I love a peanut butter banana flavor combo!

Maybe it was because Easter fell in this round and I had ham and eggs on the brain, or maybe it was just because it looked delicious. Either way, I fell hard for Grandparent’s Plus’ Canadian Bacon Quiche!
A few weeks ago I featured the sweet Phyllis’, of Grandparents Plus, Berry Pie. A few weeks before that, April and I both fell in love with her Lemon Angel Pie. It may seem that we’re playing favorites, but the truth is that Phyllis just has some amazing recipes that she shares with us each week! I hope you’ll check out her blog and see for yourself.
A quick and straightforward recipe with limited ingredients, my quiche turned out not only beautiful but delicious as well.

The addition of Gouda cheese was a nice, mild change from using cheddar.
I used chopped grape tomatoes and added a bit of red onion. I also used a pre-made deep dish crust and baked it at 350 for about 70 minutes.
Together with a salad, the quiche made for a tasty dinner. Thank you, Phyllis, for sharing this delicious dish with us!
