Coconut and Lime Pork – Eclectic Red Barn

The one thing in common my features had this week is that they were all delicious! That’s where the similarities ended. 4 Sons’ R Us had the BEST idea – to turn a regular southern staple such as a fritter into a delicious, bacon-full delicacy, and I will be forever grateful. After eating said bacon-full delicacy, it became very necessary for me to enjoy a meal a little lighter – Courtney’s Cookbook’s Veggie Noodle Stir-Fry in Peanut Sauce fit the bill nicely. My favorite – and my family’s – was without a doubt the Balsamic Strawberry Gelato from Morsels of Life
I too used a balsamic vinegar reduction and soaked the strawberries before pureeing them. If you’ve not done this before it’s as easy as gently boiling your balsamic vinegar until it has been reduced by about half – this will give more of a syrup consistency and takes away a great deal of the vinegar taste. 
Beyond that, this recipe was not complicated at all. Simply add all of the ingredients, mix slightly and add to your ice cream maker. Churn according to your ice cream makers instructions. 
I froze my gelato for about 30 minutes more after the churning was complete, at which point we all enjoyed a sweet, cold, smooth treat!

I don’t know about you, but I’ve been eating less than healthy ALL summer, and it’s starting to catch up with me! This week, my features all run on the healthy side. All three prove that healthy can be super-delicious! 
I love the idea of a “skinny” peanut butter fruit dip and this one from Grounded and Surrounded looks so creamy, with just the right amount of peanut butter-ey goodness. Just Simple Somethings’ Zucchini Pineapple Bread has to be good for you with all of those fruits and veggies! But my favorite this week was from Amy at My Life from Home, who shared a tweaked family recipe with us for Cranberry Pine Nut Sausage Pasta! 

I made a few tweaks of my own, subbing Wacky Mac for regular tri-color pasta.

 

I also swapped veggie breakfast sausage for the pork sausage – that’s what I had in the house – and added a touch of poultry seasoning to increase the savory flavor. 
This dish was beyond simple and beyond delicious! My entire family LOVED it – Even my son and he likes everything  – as long as it looks and tastes like pizza! It’s a rare night that I’m not making him a separate dinner, so this was a treat all the way around! 
This will be going into my regular rotation – a huge thank you to Amy at My Life from Home for sharing it with us!

My features this week are all on the sweet side – that sweet tooth of mine is working over time! I’ve never met a Scotcharoo I didn’t like and these from Don’t Sweat the Recipe looked delicious. These “Rose” Pastries from Something Sweet by Winnie would be perfect for a Sunday brunch.

I decided to try the Blackberry Pie Squares from Kylee Cooks because A) I love, love a shortbread crust and B) I just happen to have an overabundance of blackberries, given the season! Lucky for me, I keep all of my used berry containers for just such a season. 
Although this recipe looked a bit involved, it went together very quickly. 

Be sure to take your crust out of the oven when it’s just lightly browned. You’ll want the crust to be chewy and soft. 

Be sure to cool thoroughly before cutting. 
The original recipe makes quite a large batch – I made a half-batch, and the recipe halved perfectly. 

The contrast between the crust and the custard center along with the berries is a fantastic combination of flavors and textures. I’ll be keeping this one in my recipe box! Thanks so much, Kylee!
